Ingredients

4 Pitas (Joseph’s Pita)
4 Whole Eggs
4 Slices Uncured Bacon
40g Reduced Fat Mexican Shredded Cheese
56g Reduced Guilt Guacamole from Trader Joe’s
40g Sriracha

Preparation

1. Preheat oven to 500 Degrees F. Roll pitas in a cylinder shape and fold them over hamburger style. This will ensure when you place them on a rack in the oven, then form into a taco shape. Add the pitas to a rack in the oven. Bake for 4-6 minutes until golden.
2. Preheat stove top pan and cook bacon on 6/10 heat. Once the bacon is done, add to cooling rack covered in paper towels to ensure it gets crispy.
3. Cook the eggs in the bacon fat. Add sea salt and ground pepper, if desired.
4. Now it’s time to put the Chalupas together. Add your eggs, cheese, bacon, guacamole and Sriracha! Then enjoy.
