BIRTHDAY CAKE PIZZA DOUGH
30g All Purpose Flour
8g Coconut Flour
15g Level-1 or Protein of Choice
3g Zero Cal Sweetener of your choice
4g Baking Powder
100g Plain Nonfat Greek Yogurt
50g Egg Whites
10g Sprinkles
PROTEIN FROSTING
15g Level-1 or Protein of Choice
7g Powdered Sugar
30g Plain NonFat Greek Yogurt
4g Sugar Free/Fat Free White Chocolate Pudding Mix
2g Zero Cal Sweetener of your Choice
Cold Water to Consistency of Frosting
5 Drops Red Food Coloring

10g Sprinkles

Preparation

1. Preheat the oven to 450 degrees F. Mix all dry ingredients (except for the sprinkles) in one bowl and wet ingredients in another. Combine the two bowls together and mix some more, then add in the sprinkles.
2. Cover a pizza pan with parchment paper. Spread the pizza dough into the desired pizza shape. This is a wet crust so using your spoon to do this is essential. I use a circular motion working the dough into the shape of a pizza with the outside crust having more dough than the middle.
3. Now place the pan in the oven for 8-10 minutes (keep an eye on it). One thing I like to do at the 5 minutes mark, is carefully take the pizza off the parchment paper and add back on the pan. The parchment tends to want to hold a lot of liquid so the top will be a little more cooked than the bottom. Add back into the oven for 4-5 more minutes.
4. Take it out once the crust starts to golden and let it cool on a cooling rack.
5. While the pizza is cooling make the protein frosting by adding the dry ingredients into a bowl and mixing. Then slowly add cold water 10ml at a time and mix and repeat until there is a thick but not too thick frosting like consistency. Add the greek yogurt and mix. Add to fridge to keep cool until the pizza is the temperature you’d like.
6. Once pizza is cool, add your toppings on top and enjoy!
