POP TART DOUGH:
70g All Purpose Flour
30g Level-1 or Protein of Choice
20g Brownie Batter Protein Cookie Butter Powder
20g Black Cocoa Powder
20g Almond Flour
8g Zero Cal Sweetener of your choice
140g Plain NonFat Greek Yogurt
CHEESECAKE FILLING & FROSTING (USE HALF):
220g Fat Free Cream Cheese
227g Plain NonFat Greek Yogurt
60g Level-1 or Protein of Choice
8g Zero Cal Sweetener of your choice

CHOCOLATE ICING (USE HALF):
30g Level-1 or Protein of Choice
15g Powdered Sugar
10g Black Cocoa Powder
4g Sugar Free/Fat Free Vanilla Pudding Mix
About 100ml Unsweetened Almond Milk
ADDITIONAL TOPPINGS:
5g Sprinkles per Pop Tart

Preparation

1. Add all dry ingredients to the food processor and pulse to avoid any clumping. Add nonfat Greek yogurt and pulse until a dough ball is formed.
2. Flour a surface- I like to use a silicone mat. I use parchment paper sheets as well. Roll out your dough on the surface.
3. You will need 12 rectangles to make 6 pop tarts so err on the side of thinner strips of dough.
4. Use a pizza cut to cut out one rectangle and then use that as your gauge for all of the other pop tart dough pieces.
5. Place all twelve pieces of dough in the fridge to keep cool.
6. Make filling and frosting by placing cream cheese, protein powder, zero cal sweetener and nonfat Greek yogurt into the food processor and blending until smooth. Scrap sides and repeat. Place in the fridge to keep cool.
7. Make chocolate frosting by combining dry ingredients, mix to avoid clumping. Add almond milk and mix until smooth. Add to the fridge for 30 minutes.
8. Put together the pop tart by laying down a piece of dough, adding filling and then brush the edges of the pop tart with egg white wash to help seal the pop tart.
9. Take another piece of dough and brush the bottom of that piece with egg white wash to help seal the pop tart. Take that piece and place on top of the filling, press down hard and use a fork to crimp the edges of the pop tart down. Repeat the process for all of the pop tarts.
10. Preheat the air fryer to 360 degrees, place the pop tart in the air fryer, spray with non-stick cooking spray and cook for 6 minutes.
11. Remove, let those cool and then add more filling and frosting on top. Sprinkles if you would like and enjoy!
