1 Lavash Bread
100g Pure Pumpkin
15g Level-1 or Protein of Choice
5g Coconut Flour
45g Plain Nonfat Greek Yogurt
3g Zero Cal Sweetener of your choice
Dash of Ground Cinnamon
Dash of Pumpkin Spice
10g Egg Whites

Preparation

1. Preheat the oven to 400 degrees F. Add the dry ingredients to a bowl and mix. Add pumpkin and greek yogurt to the dry ingredients and mix. It should be a cookie dough like consistency. If it is not, then add 10ml of cold water and repeat until it yields a cookie dough consistency.
2. Lay the lavash down flat and slice into three rows and then across to make 6 pieces. This will make 3 pies. Add some egg whites into a bowl and brush egg wash onto the edges of the lavash bread. Lay a piece of lavash onto an oven safe pan. Then add 1⁄3 of the filling to the middle of that piece. Then dip another piece of lavash into the egg white wash and add on top. Take a fork and crimp the edges shut. Then repeat this process with the rest of the pies.
3. Spread the egg white wash across the tops of the pies. This will help them golden when baking. Sprinkle a little bit of cinnamon, pumpkin spice and sweetener on top and stab holes in the top of the pies. Add to the oven for 6-8 minutes.
4. Then put on broil for 1-2 minutes to golden the top. Remove and add to cooling rack to let cool. Once cool, enjoy!
