Mac & Cheese
56g Elbow Pasta (Can use gluten free if you need to)
21g Fat Free Shredded Cheddar Cheese
21g Trader Joe’s Light Shredded Mozzarella (Any part skim mozzarella)
34g On The Border Queso (Any Queso with only 3g fat or less)
1. Take a small stove top pot and fill with water about 3⁄4 way up. Set burner on high and bring water to a boil. Then add the macaroni to the water and turn water on low and add the cover to pot. Cook for 4-6 minutes until macaroni is soft but not too soft. Make sure to mix it around so it does not stick to the bottom.
2. Once the macaroni is done cooking, drain the water and add macaroni back to the pan. Add the queso and shredded cheeses. Place back on the burner on low heat with cover on for a minute or two and let the cheese melt. Mix once melted.
3. Then take out once all cheese is melted and enjoy! It’s that simple!
