Cookie Butter Bites
10g Level-1 or Protein of Choice
10g Black Cocoa Powder
2g Coconut Flour
62g Plain Nonfat Greek Yogurt (Optional. Can substitute with water)
20g White Chocolate
1 Reduced Fat Oreo
1. Add the dry ingredients into a small food processor and pulse to combine them. Then add greek yogurt in evenly over the dry ingredients to avoid clumping. Then pulse 15-20 times. It should be a little crumbly but when the crumbles are combined they should form a ball. Then repeat this process creating two (~24g) dough balls. Add some sprinkles into each ball at this step.
2. Add some parchment paper on top of a plate to ensure when white chocolate is added to the balls, it doesn’t stick to the plate when it hardens. Take 20g of white chocolate in a microwave safe bowl and microwave for 30 seconds to melt.
3. Take each dough ball and dip the bottom in the white chocolate and placed the dipped side onto the parchment paper. Then add rest of the white chocolate on top and sides of the ball with a spoon, Add a sprinkle of crushed Oreo on top and place in the refrigerator to harden. These can also be placed in the freezer to expedite the cooling process.
4. Then take out and enjoy!
